This low fat, low carb soup is a delicious way to cozy up and easy to freeze for leftovers!
2 lb of ground turkey
1 white onion chopped
1 tablespoon of minced garlic
3-4 large carrots chopped
3-4 celery sticks chopped or sliced
1 sweet potato chopped into chunks
2 zucchinis chopped (or 1 squash and 1 zuchini)
1 14oz can of diced tomatoes
8-10 cups of chicken broth
1 can of white beans
1 tablespoon of salt
1 teaspoon pepper
1 teaspoon smoked paprika
1 teaspoon basil
1 teaspoon oregano
1 teaspoon garlic powder
1 teaspoon crushed red pepper
4-6 dried thyme sprigs
Parmesan/Sour cream to top soup (optional)
In a large skillet, cook the ground Turkey with onions, minced garlic and seasonings until browned. Drain fat and add to crockpot.
Add everything else to crockpot EXCEPT squash and zuchini (they only need about 30 minutes or they will get to soft)
Cook on low for 4-5 hours or high for 3-4 hours.
