LOW CARB chicken fajita soup
1 ½ lbs chicken breast
32 oz chicken stock
14.5 oz can diced tomatoes
1 medium yellow bell pepper diced
1 medium orange bell pepper diced
1 medium onion diced
4 large cloves garlic, minced
1 pack of Taco Seasoning
2 tsp sea salt, more to taste
Legit, toss it all in the crockpot for 5-6 hour on low.
Use two forks to shred the chicken!
Top with reduced fat shredded cheese, and sub plain greek yogurt for sour cream (I promise you won't even taste the difference, and its sooo much creamier!) I even tossed some Everything But The Bagel seasoning in mine!
