Stuffed peppers are one of my favorite dinner go-to recipes! They are quick, easy and fun to make and keep your grocery bill low. They are even better warmed up the next day for breakfast or lunch!
1 pound organic ground beef or turkey (i prefer turkey)
1/2 cup uncooked long grain white rice or jasmine rice ( i prefer jasmine rice b/c its sticky)
Olive Oil
1 cup water
3 Lime
2 cups shredded jack cheese
6 green/yellow bell peppers
2 (8 ounce) cans tomato sauce
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
salt and pepper to taste
Preheat oven to 400 degrees F
Place the rice and water in a saucepan, and bring to a boil. Reduce heat, cover, and cook 20 minutes. In a skillet over medium heat, drizzle olive oil and cook the beef/turkey until evenly browned.
Remove and discard the tops, seeds, and membranes of the bell peppers. (Slice the bottoms of the peppers if necessary so that they will stand upright.)
Once meat is browned, add rice and tomato sauce to skillet with meat. Add garlic and onion powder.
Place peppers on a baking tray/sheet lined with tin foil. Drizzle Olive oil and salt and pepper on peppers and bake 10-15 minutes in oven, until the peppers are tender.
Fill peppers with meat and rice mixture. Top with shredded cheese, squeeze lime for taste and enjoy!
